class='avia_textblock'  itemprop=\"text\" ><p>El <strong>Restaurant Ib\u00e8ric<\/strong> ofrece cocina de mercado, ampurdanesa, de cazuela y tambi\u00e9n de pescado. Es una cocina mediterr\u00e1nea, con sofritos, guisos, brasa, suquet, y con productos del territorio, como el recuit de Ca la Nuri y otros platos cocinados de forma tradicional, como las setas &#8211; oronjas colmenillas y surtidos de setas de las Gavarres y del Empordanet-, los caracoles, la trufa negra o las Angulas del Ter.<\/p>\n<p>Los platos m\u00e1s emblem\u00e1ticos del Ib\u00e8ric son los <strong>Fideos con bogavante<\/strong>, los <strong>Caracoles a la patarrellada<\/strong>, los <strong>Cigalas<\/strong> y todas las <strong>cazuelas con una base de pescado<\/strong> como las calderetas o los arroces, de Pals. El pescado y el marisco, de los palcos de la Escala y Palam\u00f3s. Y en invierno, tambi\u00e9n es de destacar <strong>la brasa<\/strong>, ubicada en una de las salas con el cordero u otras carnes a la brasa.<\/p>\n<p>Se abri\u00f3 en 1978 por iniciativa de <strong>Tom\u00e0s Cateura<\/strong>. Proveniente del mundo de la campo, lo regent\u00f3 desde los inicios como si fuera una casa de comidas m\u00e1s que un restaurante tal como lo entendemos ahora. Se dispensaba un trato muy personal, muy particular, y no hab\u00eda carta. Tom\u00e0s Cateura, junto a platos tradicionales tambi\u00e9n introdujo platos m\u00e1s ecl\u00e9cticos y as\u00ed se pod\u00eda degustar lagarto de Toledo, sopa de tortuga del Delta del Ebro, cangrejos de r\u00edo aut\u00f3ctonos, truchas o carne de avestruz, por poner s\u00f3lo algunos ejemplos.<\/p>\n<p>Tambi\u00e9n fue <strong>pionero<\/strong> en otros aspectos: fue el primer restaurante que fue a comprar de forma directa a\u00a0la lonja de Palam\u00f3s, en 1992. A partir del a\u00f1o 2000 entran en juego los hijos de Tom\u00e0s: Enric, en la cocina, Gerard y David, en la sala. La carta que incorpora el restaurante es bastante similar a lo que se hab\u00eda hecho inicialmente, y, siempre ha incorporado platos prestados de otras zonas gracias a las recetas que les han aportado gente de paso, gente de otras tierras. La cocina ha seguido la misma l\u00ednea que ten\u00eda en sus inicios pero actualizada.<\/p>\n<p>Siguiendo en esta l\u00ednea, en el verano de 2018 hemos introducido en nuestra cocina un <strong>horno de terracota<\/strong>. Es un horno artesanal que funciona con <strong>le\u00f1a de encina<\/strong> y que nos da un gusto y una textura muy particular a algunas elaboraciones. Aunque es ideal para cocinar carnes, tambi\u00e9n hacemos otros platos que admiten una forma de cocci\u00f3n diferente y que <strong>nos devuelve a los or\u00edgenes<\/strong> de c\u00f3mo hab\u00edan
